Steaks @ Their Best

I had several request for my pan seared steak recipe that John O and I talked about on the air - I just finished a very tasty steak for my birthday dinner tonight so here is the recipe…

Pan Seared Rib Eye

1 boneless rib eye steak, 1 1/2-inch thick
Canola oil to coat
Kosher salt and ground black pepper

Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

The King celebrates John O's Birthday

John O and the King

My family and I went out to dinner for Cinco De Mayo so we went to a Mexican restaurant.   Much to my surprise the entertainment at the restaurant was not a mariachi band but an Elvis impersonator. Nothing says “Cinco DeMayo” like an Elvis impersonator… this guy was good… he even had his own fan club, and they were there in force. My birthday was the next day, so naturally I had to celebrate my birthday with him. Thank you, thank you very much.
